While doing some research on another project I’m working on, I recently ran across a great article in the Great Falls Tribune (Great Falls, Montana’s local newspaper) featuring a new completely dedicated gluten free restaurant called Pegasus Blu. My research shows the restaurant doesn’t currently have a website I can point to, but it appears to be completely dedicated to gluten free foods, and promises that the foods will taste as good as any food which contains gluten.
If you’d like to learn more about Pegasus Blu, you can read more about it in the Great Falls Tribune:
Since we started handing out samples at the Farmers Market, we found out there is a celiac support group in town, as well as a co-op of people who exchange gluten-free products, so we are very confident in our menu decision,” Clark said. “The one thing we won’t sacrifice, though, is taste. Our customers will not be able to tell the difference between our dishes and those with gluten.

We are the (part) owners of this restaurant! We have opened the ONLY gluten Free restaurant in Great Falls, Montana! My wife is Celiac and the entire staff is 100% versed on allergies, especially gluten. we have NO gluten at all in the kitchen, and the cook (Clory) takes great pride in many of her delicious recipes that she has painstakingly adapted to gluten free. Please take a minute to stop by downtown great falls in times square (525 central Ave) on the second floor and we think you’ll be pleasantly surprised, Celiac or not! 406-225-5495 Tuesday-Saturday 0800-3PM Thanks for the GREAT website resource, our website is coming soon
