While doing some research on another project I’m working on, I recently ran across a great article in the Great Falls Tribune (Great Falls, Montana’s local newspaper) featuring a new completely dedicated gluten free restaurant called Pegasus Blu. My research shows the restaurant doesn’t currently have a website I can point to, but it appears to be completely dedicated to gluten free foods, and promises that the foods will taste as good as any food which contains gluten.

We are the (part) owners of this restaurant! We have opened the ONLY gluten Free restaurant in Great Falls, Montana! My wife is Celiac and the entire staff is 100% versed on allergies, especially gluten. we have NO gluten at all in the kitchen, and the cook (Clory) takes great pride in many of her delicious recipes that she has painstakingly adapted to gluten free.
