For those fortunate members of the Celiac Disease community who have an Outback Steakhouse in their area, this restaurant has long been a popular destination due to their knowledge of the gluten free diet and their gluten free menu. So, how did all this come about?

Tiffany James recently published a fun article over at The Examiner celebrating the 1-year anniversary of the gluten free Bloomin’ Onion, a food that the restaurant has long been known for. The post then goes on to share the story of how the bloomin’ onion and the rest of Outback’s gluten free menu came about.

Here is an excerpt from Tiffany’s post:

The original batter was made from cornstarch which was very good but not exceptional. Cornstarch batter doesn’t taste like wheat flour batter, of course. The proprietor of this Outback location is Tom Propp who does not want to serve anything mediocre to his customers. He experimented with gluten-free flours and products until he found just the right combination.

Once the batter was perfect, Tom started making things other than fried shrimp. Chicken fingers came next and finally the world famous Bloomin’ Onion. After these creations were sampled by a few discriminating gluten-free diners, Tom had no choice but to invest in a dedicated gluten-free fryer. Needless to say this was a big investment but one that Tom has never regretted for a moment.

Tom Propp is a bit of a perfectionist regarding the food he sends out to the dining room so it was no surprise that he took time perfecting all the new gluten-free dishes for his expanded gluten-free menu. To date it includes - Mac-n-Cheese, No Rules Pasta, Toowamba Pasta, Kookaburra Wings, Bushman ‘Shrooms, Gold Coast Coconut Shrimp, Fried Chicken Tenders and the now world famous gluten-free Bloomin’ Onion. Of course the normal gluten-free menu is also available and it’s full of many delicious gluten-free selections, including the decadent Thunder From Down Under chocolate dessert. This Outback location even stocks four gluten-free beers and gluten-free buns for burgers and sandwiches – made complete with gluten-free fries!

I just received the following press release which I wanted to share with our readers. If you have a press release which you’d like to see featured here (which is related to gluten free restaurants), please contact us!

Beginning May 4th, 2009 Boston’s Restaurant & Sports Bar in partnership with Rich Products Corporation will be rolling out gluten-free pizza to their menu nationwide.

Boston’s is one of the first casual dining concepts to implement gluten-free crust nationally. The new menu along with the gluten-free crust was tested at Boston’s corporately owned restaurant in Irving, Texas. Boston’s has received positive feedback from guests who suffer from Celiac Disease and gluten intolerance. According to the journal, Practical Gastroenterology, 49% of respondents in a survey stated that gluten-free choices on restaurant menus would improve their quality of life (1).

“Food allergies pose a serious challenge for many Americans,” says Boston’s Vice President of Food Services, Bill Hancox. “It is not easy to make gluten-free pizza dough and gluten-free products are sometimes hard to find when dining out. Since pizza is one our signature items we wanted to offer a gluten-free product that all of our guests could enjoy while dining at Boston’s.”

The recently updated menu offers many new items for the health conscience. In addition to the gluten-free items, Boston’s has included a “Healthy Hits” section that features items with health conscience attributes such as the Asian Glazed Salmon or Whole Wheat Florentine Pizza. “We know that more and more people are looking for healthier menu offerings while dining out in hopes of maintaining a more balanced diet,” says Boston’s Vice President of Marketing, Jack Civa, “with our Healthy Hits menu, guests can enjoy all the flavor of Boston’s without the guilt they sometimes feel when dining out.”

For additional information regarding Boston’s gluten-free pizza crust please contact Gje Lee, National Brand Manager, Boston’s The Gourmet Pizza®.

About Boston’s Restaurant & Sports Bar

Headquartered in Dallas, Texas, Boston’s The Gourmet Pizza® mirrors its sister company, Boston Pizza, the No. 1 casual dining brand in Canada. Introduced in the U.S. in 1998, Boston’s The Gourmet Pizza® is franchised by Boston Pizza Restaurants, L.P. Boston’s offers a contemporary, sit-down family dining atmosphere with a separate sports bar customized with local team memorabilia. The result is a fun, high-energy setting for families and sports enthusiasts alike. While Boston’s specializes in gourmet pizza and pasta, menu features more than 100 items including salads and sandwiches, along with sports bar favorites, such as burgers, wings and ribs. With annual system wide sales exceeding $864 million, Boston Pizza and Boston’s have more than 350 outlets throughout the United States, Canada and Mexico. Boston’s grows primarily through franchises and is scheduled to open 10 new restaurants in 2009. For more information, visit www.bostons.com.
